Did you know that cake pops can be easy? It’s true! The O’Funnigan Monkeys have a super simple recipe for you to try. Made with only 3 ingredients, these chocolatey cake pops are super easy to prepare, and kids can get involved from start to finish. They also don’t require any baking, so you can rest assured they’ll turn out great. Just mix, roll, and dunk, and you’ll have yourself a batch of yummy, bite-sized treats perfect for birthdays, special occasions, and weekends that could use a few sprinkles.
Ingredients
4 oz Cream cheese, softened to room temperature
5 oz White chocolate, melted
Sprinkles or cookie crumbs (optional)
Equipment
A lollipop stand, Styrofoam block, or bowl of rice
Directions
- Crush the cookies in a food processor until they are finely crumbed. This should only take a few pulses.
- Add the softened cream cheese to the food processor and continue to pulse until smooth.
- Line a cookie sheet with parchment paper. Using your hands, roll the cookie mixture into 1-inch balls and place them onto the prepared cookie sheet, about 1 inch apart.
- Refrigerate the balls for 10 to 15 minutes. In the meantime, melt the white chocolate. Pour the chocolate into a microwave-safe bowl, then microwave in 30-second intervals until the chocolate is smooth. Stir between every interval so that the chocolate melts evenly.
- Remove the cake balls from the fridge. One by one, pierce the bottoms of your cake balls with the lollipop sticks, about halfway through, and dip them into the melted chocolate. Submerge the balls until the chocolate meets their sticks, then remove carefully. Wiggle the cake pops to remove excess chocolate.
- Top the cake pops with sprinkles or cookie crumbs.
- Place each cake pop, cake side up, into the lollipop stand. Allow to set for about an hour before serving. Enjoy!
Tips for Making Cake Pops
- Dip the tips of your lollipop sticks into the melted chocolate before sticking them into the cake pops. This will help to keep the sticks in place. To do this, dip the sticks into the chocolate, about 1/3 of an inch deep, then wipe any excess onto the side of the bowl. Pierce the bottoms of your cake balls, one by one, then set them aside for a minute or two before coating them entirely in chocolate.
- Use a toothpick to pierce any bubbles that appear in your chocolate coating. Then, give your cake pop a gentle shake to ensure that the coating is nice and even.
- Make sure that your cake balls aren’t too big before you dip them in the chocolate. Balls that are too big will be too heavy for their sticks and fall over.
- Feel free to use your hands when mixing the cream cheese with the cookie crumbs. This might ensure a more even mixture (and it’s more fun for kiddos).
- If your dough balls are cracked, the chocolate coating you apply on top might also crack. But don’t worry – there is an easy fix for this! To prevent cracking, fill each crack you find in the dough with melted chocolate, then give it a minute to cool. You can then dip your repaired cake pop into the melted chocolate to finish coating.
