That’s right, it’s dough! But not the kind of dough you can’t eat raw. There are no eggs in this recipe, and instead of flour, there are rolled oats. So, it’s perfectly edible without any baking. (It’s also gluten-free!) Within a jiffy, you can serve scoops of dough with apple slices, graham crackers, ice cream, or whatever else your family desires. This edible cookie dough is perfect for movie nights, birthday parties, and fall get-togethers.
Ingredients
½ cup unsalted butter, softened to room temperature
½ cup packed brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
½ tsp salt
1-2 tbsp milk
1 cup semi-sweet chocolate chips
*If you don’t have any oat flour, use a food processor to pulse 2 cups of rolled oats into a fine powder. You can also use ¾ cup of almond flour instead.
Directions
- First, use a mixer to beat the butter at medium to high speed until smooth and fluffy, about 1 minute. Add both the brown sugar and granulated sugar and continue to beat, at medium speed, for 1 or 2 more minutes. Then, add the vanilla extract and beat for another minute or until smooth. Scrape the sides of the bowl as needed.
- Add in the oat flour, salt, and 1 tbsp of milk. Beat on medium to high speed for 2 minutes or until smooth. The mixture should be quite thick. If you’d like the dough to be softer, add another tablespoon of milk and repeat if necessary.
- Spoon the cookie dough mixture into a serving bowl and enjoy!
